Bison Vegetable Pizza

If you’re like any other human being on this earth… you love pizza.  What if I told you, that you could eat pizza everyday for lunch, and still look fabulous? Id say that’s winning.

First off, sprouts sells flat breads that are made with oatmeal (27g of carbs/wrap), OR you can make homemade oatmeal dough!

Ingredients:

  • 4 oz. of grilled bison (I prepped prior that week- seasoned with onion & herb mrs. DASH)
  • 1 Oatmeal Flat Bread (or below for homemade dough)
  • 1/4 cup of steamed brussels sprouts (prep prior- steam in a small pan)
  • 1 cup of Kale
  • 2 tbsp. of organic roasted tomatoes
  • 1/4 cup of natural red sauce
  • 1-2 tbsp. of parmesan cheese – optional
  • 2 tbsp of portobello mushrooms
  • 1 tsp. of minced garlic

Directions:

  1. Pre-heat the oven to 350 degrees.
  2. In a small frying pan sauté the garlic, brussels, kale, and roasted tomatoes.
  3. Then add the bison into the pan and mix together.
  4. Spread the red sauce on the flatbread, and add the toppings.
  5. Place in the oven for about 10-15 minutes!

 

Oatmeal Dough: 

Ingredients:

  • 1 cup Old Fashioned Oats, blended into flour (regular blender works fine)
  • 1 Whole Egg
  • 2 egg whites
  • 1 tbsp. of flaxseed, ground
  • 1 tsp. of garlic powder
  • 1 tsp. of onion powder
  • 1 tsp of Italian seasoning
  • 1/4 cup Water
  • 1 tsp of baking powder
  • Sea Salt and Pepper, (to taste)

Methods:

  1. Pre-heat the oven to 350
  2. Blend the oatmeal into flour, and then add all the seasonings.
  3. On a flat cookie sheet spread the oatmeal dough out into the shape of a pizza, and place into the oven.
  4. After about 10 minutes, flip the dough and cook for another 5 minutes.
  5. Once the dough is done, place all the topping on the dough, and back into the oven for another 5 minutes.
